I’m ready to leave the winter behind with these delicious summer rolls! Most foods are so easy to make vegan, and this recipe will show you just how easy it can be.
You will need:
5 sheets of rice paper
1 oz. rice noodles
1 sliced cucumber (strips)
1 bag of shredded carrots
1/2 cup fresh cilantro
1 bag mixed greens
Optionally, you could add in some small “chicken” strips or tofu.
Start by boiling some water in a small pan, add in your rice noodles and cook for about 3-5 minutes until done. When done, strain and rinse well with cold water. Separate the noodles into five equal portions and set aside.
Now we need to wet the rice paper for wrapping, you can either get a large bowl or a plate capable of holding water and fill it with warm water. Submerge one end of the paper, rotating until pliable. Remove the paper from the water and allow excess water to drip back into the bowl or plate.
Place the paper on a plate. Make a small pile of mixed greens on the papers center (greens come first, for presentation). Add a couple of leaves of cilantro, a tablespoon or so of carrots, one or two strips of cucumber, and one portion of the rice noodles – spreading evenly over the greens.
Wrap it up like a burrito (fold one side over the filling, tuck in the ends and roll until sealed) and serve with your preferred dipping sauce. You can make these ahead of time and stick them in the fridge as well, just don’t let them go bad. Happy eating!
